Q - You’re credited for bringing Nobu to
gourmands around the world, and now you’ve
expanded the brand to hotels. How did
your working relationship come about?
RDN - I appreciated something special and great in what he did, and I wanted to be a part of it. There are some people whose abilities I admire. Nobu, his great ability as a chef—he does things that I could never do. I have great respect for people that have skill in whatever they do... or are special in what they do. They are unique. That’s the best a person can do, whether they’re an astronaut or chef or practice any art form.
The two-time Academy Award winning actor has been working on another, much larger, project: helping to create the world’s first Nobu Hotel, and bringing it to Caesars Palace.
It’s the next act in his long-standing partnership with Japanese super chef Nobu Matsuhisa, with whom he has opened a string of hugely successful popular restaurants around the world. “Its like having chemistry with your co-star on a movie.” De Niro says of their teamwork. “The thing I’ve always respect most is his concern for quality.”
“We started over twenty years ago,” he remembers, “when I went to Matsuhisa, Nobu’s first restaurant in Los Angeles. It was a real hotspot and what he was doing in the kitchen was very special. I had never tasted Japanese food like it. I told Nobu having that kind of place in New York would be a no-brainer. And so eventually got together.”

Now with the help of hotel veterans Trevor Horwell and Struan McKenzie, they plan to take Nobu to the next level: hotels. In a rare interview, the five of them, now Nobu Hospitality, sat down with HD at the Greenwich Hotel in New York to talk recreating theatre, timeless spaces, and passion.
